Inulin is a large, water-soluble fiber, which stays intact in the guts and thus attracts good bacteria to nourish them. Inulin does not feed the harmful gut flora. Harmful bacteria sustain themselves mostly on the breakdown products of refined sugar. Inulin is a good source of carbohydrate-energy for diabetics, as it doesn’t raise blood sugar levels even when consumed regularly.
